which included Jasmine Pearls, one of my favourites. The little balls – which are hand-rolled in China – look so pretty when they unfurl in the bottom of the cup and the tea is refreshing and delicate – I love it. Silver Lantern sells a 25g bag for £4.45 which is enough for loads of cups and is the best price I’ve seen for it.
I also like using tea to smoke food. It’s a Chinese technique I learned last year at Leiths School of Food and Wine and I have used it time and time again since then to smoke mackerel, chicken and duck on my hob at home.
Black teas are best for this – I’ve used Lapsang Souchong and Assam which both worked well but I’m going to try with Silver Lantern’s Milima tea with one or two of their dried rose to see if I can infuse a gentle Middle Eastern flavour into a whole sea bream. (I’ll let you know how it goes!)
